To celebrate her Ulster Scots heritage, award-winning chef Paula McIntyre is preparing a Burns Night feast – with a twist.  Using an over 150 year old newsletter as her guide, Paula sets out to recreate the menu of a lavish banquet held in Belfast in 1859.

Framed around the skilled preparation of dishes such as Potage a la Reine, Turkey a la Perigold and of course Haggis, we learn not only about Burns Night, but also Robert Burns’ enduring importance in not only Scotland, but Northern Ireland too.

Not only a lesson from an expert chef, this one-off special is also a rare look into the truly unique culture of Northern Ireland.
