The bells are jingling in Paula McIntyre’s kitchen and she is preparing an incredible feast.
Paula’s journey with Christmas dinners started when she was 11, and she continues to perfect her recipes. She lets us in on how to prepare a succulent roasted turkey with flagrant stuffing, a savoury version of the King Cake, and decadent yuletide spiced biscuits with jewelled centres made from boiled sweets. All made with sharing joy in mind.
Inspired by her Ulster-Scots heritage, Paula explores her ancestors’ festive traditions and incorporates elements of their cuisine into her delicious dishes. She pays special attention to making sure the host enjoys the evening as much as the hungry guests, sharing top tips on how to make Christmas preparations easier without making the dishes any less spectacular.
