Chef Paula McIntyre embarks upon a food adventure in America to discover the influence of the Ulster-Scots, known there as the Scots-Irish, on what we now consider to be classic American dishes.

 

Visiting Tennessee, Kentucky and the New England region, she explores America’s diverse culture by sampling traditional food and talking to local chefs - Dolly Parton's sister Rachel being one of them. She also makes the most of her exciting trip by visiting the rodeo, going clam-digging and becoming friends with Nashville’s country musicians.

 

With the Smoky Mountains and other natural wonders of the States as her backdrop, Paula curates her own recipes using some of the ingredients her ancestors introduced to the Land of Liberty, like buttermilk or moonshine.
