Salt of the Earth

Broadcaster:  CNA

One of humanity's oldest creations, and used by almost all people across the world, salt has long shaped global trade, rituals and civilisation itself.

We journey across the Japanese and Philippine archipelagos to meet the artisans upholding rare and vanishing salt-making traditions, producing everything from earthenware salt forged by fire, to seaweed-infused minerals once offered to emperors.

From the Philippines' rare 'dinosaur egg' salt that is highly prized by modern chefs and salt created by the sun, wind and bamboo, to Japanese salt shaped by the tides and the moon, and the revival of ancient geothermal salt harvesting that has dated back over 1,000 years, we explore the incredible dedication and local knowledge that shape these timeless and delicious creations.
